Cooking instructions: Simply place 100g of barley couscous into a bowl, pour over 150ml of boiling water or stock, stir, cover, leave for about 5 minutes, drizzle with olive oil, fluff up and serve.

Serving suggestion: Use as a base for a wide variety of hearty Moroccan style dishes.

Hob - From Ambient. Simply place 100g of Barley Couscous into a bowl, pour over 200ml of boiling water or stock, stir, cover, leave for about 5 minutes, drizzle with olive oil, fluff up and serve.

Recipe suggestion: Toasted barley couscous salad with preserved lemon and coriander
You will need:
- 100g Barley couscous, toasted
- 150ml Boiling water
- 1 Tbsp chopped coriander
- 1 Beldi preserved lemon
- Early harvest extra virgin olive oil
- Salt
Method:
1. Add the boiling water to the couscous
2. Leave for 5 minutes until water is absorbed
3. Peel the preserved lemons and cut into 3 mm cubes
4. Stir in the coriander and chopped lemons
5. Add a splash of the extra virgin olive oil and salt to taste
